- 2 lbs cod fillets see notes
Butter Parmesan mixture
- ¼ cup unsalted butter softened
- 3 tbsp mayonnaise
- 2 tbsp lemon juice
- ½ cup parmesan cheese
- ½ tsp dried basil
- ¼ tsp onion powder
- ¼ tsp ground black pepper
- ¼ tsp salt
Instructions
- Preheat your oven’s broiler to high and move the wrack to the second closest row.
- For easy clean up, line a baking sheet with aluminum foil then spray with cooking oil.
- In a small bowl, mix together the ¼ cup unsalted butter, ¼ cup unsalted butter3 tbsp mayonnaise and 2 tbsp lemon juice then add ½ cup parmesan cheese, ½ tsp dried basil, ¼ tsp onion powder, ¼ tsp ground black pepper, and ¼ tsp salt.
- Arrange fish fillets in a single layer on the prepared pan.
