Instructions
Preheat your oven’s broiler to high and move the wrack to the second closest row.
For easy clean up, line a baking sheet with aluminum foil then spray with cooking oil.
In a small bowl, mix together the ¼ cup unsalted butter, ¼ cup unsalted butter3 tbsp mayonnaise and 2 tbsp lemon juice then add ½ cup parmesan cheese, ½ tsp dried basil, ¼ tsp onion powder, ¼ tsp ground black pepper, and ¼ tsp salt.
Arrange fish fillets in a single layer on the prepared pan.
Broil the unseasoned fish for 3 minutes.
Flip the fish over and broil for 2 more minutes.
Remove the baking sheet from the oven and cover each piece of fish with the Butter Parmesan mixture on the top side only.
Broil for 2 more minutes, or until the topping is browned and the fish flakes easily with a fork. Be careful not to over cook the fish.
Remove from oven and carefully transfer each piece onto plates. Serve immediately.
Notes
If you don't have or like cod, basically any white fish can be used. Haddock, tilapia, etc. If you have large pieces of fish, just make sure to cut each fillet into pieces large enough that a portion of the Butter Parmesan mixture can be placed on them.
