Weekends mean catch up on things needing done and prepare for the coming week, time. That means bread baking and snack bar making, along with boring housework, laundry, etc. At least this summer we’ll be able to add caring for goats and chickens to the list, and that’ll be a lot more exciting!
I originally posted our Peanut Butter Oatmeal Snack Bar recipe back in February 2020 (back when 2020 was weird only because the worst thing that was happening was the US and North Korea were calling each other names and sabre rattling; oh, those were the days), and since, I’ve made a lot of these snack bars. We like to change it up now and then because I almost always make 4 batches because they are great for all the go-go-go in our lives, and sometimes, something a little different is nice.
Our favourite changes:
- 2 tsp ground ginger, 1 tsp ground cinnamon, and replacing about half of the syrup with blackstrap molasses
- replacing all the syrup with molasses prevents the bars from sticking together and you end up with more of a granola crumble – which is tasty too!
- replacing the chocolate chips with dried fruits – raisins, cranberries, blueberries, etc.
I have not yet tried leaving out the chocolate chips/fruit and dipping the cooked and cooled bars into melted chocolate, but it’s on my “to try” this year. I also want to try things like almond butter, agave syrup, and other little changes.
Today’s 4 batches includes 2 regular pans, 1 pan with fruit, and 1 pan with the molasses. ginger, and cinnamon. The molasses batch smells SO good!
