1lbbaconsliced or diced into small pieces
½medium oniondiced small
1tbspgarlicminced

7cupswater
1canevaporated milk

2tbspBetter Than Bouillon Chicken

Instructions
Fry 1 lb bacon in large pot until cooked but still soft, then drain all but approximately 1 tablespoon bacon fat.
Fry the prepared ½ medium onion, 1 tbsp garlic, and 2 stalks celery with the bacon in the bacon fat until tender and bacon is crisp.
Add 7 cups water, 1 can evaporated milk, 5 lbs potatoes, 2 tbsp Better Than Bouillon Chicken, 1 tsp ground pepper, and bring to a boil, stirring often,
Reduce heat to simmer, and cover, simmering until potatoes are tender, about 10 minutes.
Remove from heat and, carefully to avoid burns, use a potato masher to mash potatoes. If you want a chunkier soup, don't mash completely. For a much smoother soup, you can use an immersion blender.
Soup will thicken as it cools. Serve with 8 ounces cheddar cheese.
Notes
Regular milk can be used, or left out, but the best flavour, we've found, is from using evaporated.
