Pistachio Delight is a surprising delicious, nostalgic and easy-to-make treat that offers a unique twist on dessert with layered flavors that blend beautifully.
Preheat oven to 350°f and lightly grease the bottom of a 9x13" baking pan.
Mix the 1½ cups all purpose flour, 1 cup pecans, and ¾ cup unsalted butter together. Add the crust mixture to greased pan and press down to form a firm, even crust.
Bake the crust for 20-30 minutes or until the edges start to brown.
Remove from oven and cool for 15 minutes on the counter. Refrigerate the crust until completely cooled.
Cream Cheese Layer
Using the paddle attachment on the stand mixer or a hand mixer, cream together the 8 oz cream cheese, ½ cup powdered sugar, and 8 oz cool whip.
When completely combined, evenly spread the mixture on top of the cooled crust.
Pistachio Pudding Layer
In a medium mixing bowl, combine the 3.4 oz instant pistachio pudding (2 boxes) with3 cups milk until it begins to thicken.
Spread the thickened pudding over the cream cheese layer evenly.
Cover and allow the dessert to chill in the refrigerator for about an hour.
Topping
Once the dessert has chilled for an hour, spread 8 oz cool whip over top of the pudding layer. If desired, top the cool whip with 2 tbsp pistachios and/or pecans
Allow the dessert to chill for another hour or until ready to serve!
