Better flavour than those overpriced packets, with no MSG. Seasons up to 2 lbs ground meat.

If you’ve ever suffered from a migraine, you will probably understand the sentiment that migraine sufferers will do almost anything to prevent another attack. Food triggers can be tricky to sort out, but some are glaringly obvious. One small meal with the wrong ingredient, sometimes even just one bite, and you instantly know you screwed up.

I’d suffered with migraines (suffer = 20 days out of every 30) for about 10 years before I learned what MSG was. I’d already identified other triggers, like strawberries and bananas, but MSG was a little trickier. Not only is MSG, or monosodium glutamate, in a lot of foods, but 2 other ingredients, disodium guanylate and disodium inosinate, are. To make it simple, these 2 ingredients are parts of MSG that are separated so food manufacturers can say “NO MSG” while including the taste enhancing chemicals. Most often, they will also trigger a migraine.

It took forever (it feels like, when you’re dealing with migraines) to figure this all out back in the early 2000s. Thankfully, I did and starting making everything from scratch, or just doing without, to avoid those ingredients.

My rule for making things from scratch was to make them taste better than the original. MSG is a flavour enhancer and it really does help make food taste amazing, so there was a lot of misses before I started getting hits.

One of the first hits, was this taco seasoning, originally posted on December 19, 2008. It flavours taco meat – anything you’d use a packet for, or want taco seasoned – perfectly. If you’re on a low salt diet, just leave the salt out. You’ll still get fabulously seasoned ground meat.

It works for ground beef or pork, and I’m just going to assume the same for ground chicken and turkey (we don’t use those). We make tacos, burritos, taco pasta, and other dishes, and this flavours them perfectly.

I found this recipe this summer and I love it. Tacos are a favorite in my family. I keep thinking that I need to make a big jar of it so I don’t have to mix it up every time.
